The truffle

Istria is one of the most famous truffle regions in the world. Motovun forest is the most fertile ground where specially trained dogs and their owners hunt for truffles. Istria boasts the largest truffle that has been found. This 1.3 kg truffle was found by Giancarlo Zigante, one of the pioneers of truffle gastronomy and current owner of restaurants and a factory for the production of various truffle products. Truffles grow in Istria all year round, and the most famous varieties are white and black truffles. The white variety ripens from December to spring and the black from spring to summer.
